ELUSIVE JAMS

Our story started with a sip of a Fig Old Fashion during an anniversary dinner in an Atlanta restaurant. Intrigued by it's complex, yet southern taste, I sought to recreate the bourbon concoction at home. After a few attempts, I was left with a small batch of figs that were infused with the sweetest vanilla and smoked oak notes. Coming from a lineage of master jelly and fruit preservers, I could not toss the delicious fruit. So I applied an old family pear preserve recipe with a few different spices and dark sugar and our Fig Bourbon Jam idea was born.

At Elusive Jams, everything we make is seasonal, small-batch, and crafted by hand. Our jams and jellies are never mass produced or factory-made—you’ll only find them in the finest boutiques, wineries, and restaurants across Georgia. When a flavor sells out (and it often does), our customers know it might be the next harvest before it returns.

We grow most of our own fruits and peppers on our small farm and keep honeybees that help pollinate our crops. The rest comes from trusted Georgia farmers who share our commitment to quality. From planting, pruning, and harvesting to sourcing ingredients, ordering jars and lids, and hand-labeling each batch, every step is personal. My recipes are inspired by my travels in the media industry and my love for gourmet fruit spreads. My wife lends her support, but day-to-day—it’s a company of one.

For years, Georgia law required us to hold costly manufacturing licenses and travel nearly two hours to a commercial kitchen. Since 2018, we’ve worked out of Jake’s Produce & Cannery in White, GA—holding both Georgia Department of Agriculture and FDA licenses. We’re deeply grateful to Lisa at Jake’s for her mentorship and friendship through those years.

On July 1, 2025, Georgia’s updated cottage food law changed everything. We can now make our jams and jellies right here in our tiny home kitchen, allowing us to scale back, cut costs, and focus on what matters most—our fruit farm, our bee apiary, and more time with our family. The only trade-off is that we can now sell and ship only within Georgia. To our out-of-state customers, we’re truly sorry for the change.

By staying small, we keep our quality high and our flavors rare. Each jar is unique, seasonal, and crafted with the care you can only find in Georgia’s own Elusive Jams.
